Stuffed Kohlrabi with Ground Beef
With ground beef stuffed kohlrabi from Spoonsparrow: The filled bulb is not only super tasty but also perfect for take‑out!
Ingredients
- 4 kohlrabi
- 1 onion
- 1 tsp butter
- 200 g Ground beef
- 20 g Parsley (1 bunch)
- Salt
- Pepper
- 250 ml vegetable broth
- 3 tbsp crème fraîche
- 1 tsp Cornstarch

Peel the kohlrabi, cut a flat bottom and slice off a lid at the top; hollow out the bulb. Finely chop the removed flesh. Peel and finely dice the onion.

Heat butter in a pan. Add the onion and chopped kohlrabi flesh and sauté for 2 minutes over medium heat. Add the ground beef and cook until crumbly.

Wash, dry, and finely chop half of the parsley. Mix it into the beef. Season the mixture with salt and pepper.

Fill the kohlrabi with the meat mixture, place the lids back on top, and set in a baking dish. Pour in the broth, cover the dish with a lid or foil, and bake in a preheated oven at 180 °C (160 °C fan) for 40 minutes.

Remove the stuffed kohlrabi and keep warm. Strain the cooking liquid into a pot, stir in crème fraîche, and bring to a boil. Whisk cornstarch with 1 tbsp water until smooth, then use it to thicken the sauce. Taste and fold in the remaining parsley.

Plate the kohlrabi and sauce and serve hot.
