Ingredients

  • 300 g whole wheat flour
  • 3 eggs
  • 6 tbsp water
  • 0.5 tsp Salt

    Combine flour, eggs, water and salt in a bowl and knead with the dough hooks of a hand mixer as far as possible into a dough, then knead by hand until a smooth dough forms that has a wavy pattern on the cut surface when sliced.

    Either pass the dough through a pasta machine and cut into about 0.5 cm wide long noodles using the narrow ribbon attachment and hang to dry over a rod, or roll out by hand on a lightly floured work surface and cut into strips with a knife, loosen the noodles and let them air dry on the board.
