Spaghetti with Spinach

Try the delicious spaghetti with spinach from Spoonsparrow. Especially tasty in spring when fresh spinach is available.

Ingredients

  • 250 g fresh leafy spinach
  • Salt
  • 4 Garlic cloves
  • 0.5 Red chili pepper
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • Pepper
  • 500 g whole wheat spaghetti
  • 40 g bacon (in strips)

Instructions

    Wash the spinach thoroughly, remove tough stems and blanch in salted water for about 1 minute. Drain, shock with cold water, and squeeze out excess moisture.

    Peel the garlic cloves. Rinse the chili, cut it lengthwise, remove seeds and white membranes, then roughly dice the flesh. Combine garlic, chili, and oil in a food processor and finely chop. Add spinach and lemon juice, pulse to combine, and season with salt and pepper.

    Bring salted water to a boil and cook the pasta until al dente according to package instructions. Fry the bacon strips in a pan over medium heat until crisp. Toss the spaghetti with the spinach sauce, fold in the bacon, and serve immediately.
