Stuffed Eggs with Grana Padano Lemon Cream and Chives

Ingredients

  • 6 Eggs
  • 80 g Grana Padano
  • 0.5 Organic lemon
  • 100 g cream cheese
  • 1 tsp Mustard
  • Salt
  • 1 bundle chives (20 g)
  • Pepper

Instructions

    Boil the eggs in boiling water for 10 minutes, drain, cool and peel.

    While the eggs are cooking grate 60 g Grana Padano finely. Rinse the lemon hot, dry it, grate about 1 tsp zest and squeeze roughly 1 tsp juice.

    In a bowl mix yolks with grated Grana Padano, lemon zest and juice, cream cheese, mustard and 1–2 tbsp water until smooth. Season with salt.

    Wash chives, shake dry and cut into fine ribbons. Fill the egg halves with the cream using a piping bag and sprinkle with chives. Grate remaining Grana Padano over the top and lightly dust with pepper.
