Grilled Eggplant

Ingredients

  • 4 eggplants
  • 2 tbsp lemon juice
  • 5 tbsp olive oil
  • 3 cloves garlic
  • Salt
  • basil (coarsely chopped)
  • 1 diced red chili pepper
  • 2 tbsp pine nuts

Instructions

    Wash the eggplants and cut them crosswise into slices, season with salt and lemon juice. Let sit for 30 minutes, then pat dry with a kitchen towel.

    Brush the eggplant slices with olive oil, grill each side, sprinkle minced garlic and basil over the top, finish grilling. Serve the grilled eggplant sprinkled with chili flakes and pine nuts.
