Ingredients

  • 1 small carrot
  • 4 soft dates
  • 8 dried soft tomatoes
  • 1 handful thyme
  • 1 handful rosemary
  • 1 tsp Honey
  • 1 tbsp Olive Oil
  • 4 large veal bratwursts

Instructions

    Peel the carrot and finely grate it. Pit the dates and cut them into eighths. Halve the tomatoes.

    Rinse the thyme and rosemary and shake dry. Tear 1-2 thyme sprigs into small pieces. Strip 1-2 rosemary sprigs and chop the needles finely.

    Mix the carrot, dates, tomatoes, herbs, and oil in a bowl. Slice the bratwursts lengthwise and gently press them apart.

    Fill each with 1/4 of the mixture and secure with toothpicks. Grill until browned all around and serve garnished with remaining herbs.
