Stuffed Bell Peppers with Mashed Sweet Potatoes

Ingredients
- 1 kg sweet potatoes (firm, cooking type)
- red and green bell peppers (2 each)
- 2 onions
- 1 tbsp butter
- 200 g grated cheese (e.g., spicy Gouda)
- Salt
- freshly ground pepper
- nutmeg
- 250 ml vegetable broth
- 1 tbsp Sunflower seeds
- 1 tbsp chopped parsley

Peel, wash, cut potatoes into pieces and simmer in salted water for about 25 minutes.

Remove the tops of the bell peppers, core them, peel off white membranes, wash and dry. Dice the top flesh finely.

Peel, dice onions and sauté in hot butter until translucent, then set aside.

Drain potatoes. Mash with a potato masher, incorporating about half the vegetable broth. Stir in onions and 150 g grated cheese. Season with salt, pepper, and nutmeg.

Fill bell peppers with mashed sweet potatoes and place them in a baking dish. Sprinkle remaining cheese and sunflower seeds on top, then pour in the rest of the broth. Bake in preheated oven at 220 °C for about 35 minutes until golden. Garnish with parsley before serving.
