Strawberry White Chocolate Tart
A no-bake strawberry tart with white chocolate from Spoonsparrow: featuring a cookie crumb base, cream cheese and yogurt filling—no baking required!
Ingredients
- 200 g butter cookies
- 80 g softened butter
- 500 g strawberries
- 8 sheets gelatin
- 1 vanilla bean (pulp)
- 600 g cream cheese
- 200 g yogurt
- 100 g powdered sugar
- 250 ml Whipping Cream
- 50 ml orange juice
- 100 g grated white chocolate

Fill a plastic bag with the butter cookies and crush them with a rolling pin. Mix well with the softened butter in a bowl. Press the mixture onto the bottom of a springform pan, smoothing evenly with a tablespoon to cover the entire base. Refrigerate.

Wash, hull, and slice 6-8 strawberries for garnish. Cut the remaining strawberries into pieces and scatter over the cookie crust.

Soak the gelatin sheets in cold water. In a bowl combine cream cheese, yogurt, vanilla pulp, and powdered sugar; whisk until smooth. Whip the cream to stiff peaks and set aside 4–5 tablespoons for topping. Warm the drained gelatin with orange juice in a small pot until melted. Stir in 2–3 tablespoons of the cream cheese mixture, then quickly fold into the remaining cream base. Fold in the whipped cream and grated white chocolate, spread over the strawberries. Smooth the surface and chill for at least 4 hours; optionally freeze for about 30 minutes.

Before serving release the tart from the pan by cutting along the edge with a knife and removing the ring. Brush with extra whipped cream and garnish with strawberry slices before serving.
