Fig- Onion Tart
A fig and onion tart made with fresh ingredients from the onion vegetable category. Try this and other recipes from Spoonsparrow!
Ingredients
- 1 tbsp instant coffee powder
- 300 g flour
- 1 egg
- 175 g butter
- 750 g red onions
- 2 tbsp plant oil
- 100 ml dry red wine
- 60 ml port wine
- Salt
- black pepper (freshly ground)
- 6 figs
- 400 g goat fresh cheese
- 150 g crème fraîche
- 4 figs (cut into wedges)
Instructions

Dissolve the coffee powder in 2 tbsp water. Sift the flour onto a work surface and make a well in the center. Pour the egg into the well and add the coffee mixture. Distribute the butter around in small pieces and knead everything into a smooth dough. Wrap in cling film and chill for about 30 minutes.

Peel, halve, and slice the onions into strips. Sauté them in hot oil until translucent. Deglaze with red wine and port wine, let reduce for a few minutes, then remove from heat and season with salt and pepper.

Preheat the oven to 180 °C (fan).

Clean and dice the figs; mix them into the goat cheese.

Roll out the dough and lay it on a baking sheet lined with parchment paper, forming a small edge. Prick the base several times with a fork and bake for about 10 minutes. Spread the goat cheese over the crust, then top with the onions. Return to the oven and bake for another ~15 minutes until lightly golden.

Remove the tart from the oven and let it cool slightly before cutting into pieces. Serve garnished with crème fraîche and fig wedges.
