Strawberry Skyr Ice on a Stick

Finally strawberry season is back! Prepare the Strawberry Skyr Ice on a Stick from Spoonsparrow.
Ingredients
- 250 g strawberries
- 4 tbsp Lemon juice
- 3 tbsp agave syrup
- 0.5 Vanilla pod
- 200 g Skyr
- 200 g Greek yogurt
- 100 g whipping cream
- 2 tbsp almond flakes

Clean, wash and chop the strawberries. Blend with 2 tbsp lemon juice and 1 tbsp agave syrup. Split the vanilla pod lengthwise and scrape out the seeds with a knife.

Whisk the skyr with yogurt, remaining lemon juice, vanilla seeds and remaining agave syrup until creamy. Whip the cream stiff and fold it in. Take half of the mixture and stir in 2/3 of the strawberry puree.

Fill both ice mixtures alternately into ice molds with sticks and freeze completely for at least 4 hours. Release from the molds before serving. Sprinkle with almond flakes and drizzle with remaining strawberry sauce.
