Peanut Cookies

Spoonsparrow Peanut Cookies: so delicious and simple that they enchant both little sweet-tooths and big connoisseurs in no time!

Ingredients

  • 90 g softened butter
  • 120 g brown sugar
  • 1 egg
  • 2 tbsp peanut butter
  • 175 g spelt flour
  • 0.5 tsp Baking powder
  • 60 g unsalted peanuts
  • 1 tsp Honey

Instructions

    Cream the softened butter with the brown sugar and egg. Mix the spelt flour and baking powder, then fold into the batter along with the peanut butter. If the dough is too firm or crumbly, knead in a little more butter. Roast the peanuts in a dry pan over medium heat until golden brown, then let them cool. Roughly chop about 30 g of the roasted peanuts and fold into the dough.

    Line a baking sheet with parchment paper. Drop tablespoon-sized mounds of dough onto the sheet and gently flatten them. Warm the honey, mix it with the remaining roasted peanuts, and drizzle this mixture over the cookie mounds.

    Bake in a preheated oven at 180 °C (fan 160 °C; gas 2–3) for about 15 minutes. Remove the peanut cookies from the oven and let them cool.
