Strawberry- Rhubarb Layered Dessert

Ingredients

  • 150 g rhubarb
  • 150 g Strawberries
  • 60 g sugar
  • 150 ml whipping cream
  • 250 g mascarpone
  • 2 tsp lemon juice
  • 20 ml brandy
  • 8 amarettini biscuits
  • 2 tbsp chopped pistachios

Instructions

    Wash the rhubarb, remove the stems and cut into about 3 cm pieces. Wash, pit, and chop the strawberries into small pieces. Combine both with 4 tbsp water and 30 g sugar and simmer for about 5 minutes.

    Whip the cream until stiff peaks form. Beat the mascarpone with lemon juice and brandy until creamy. Fold in the whipped cream.

    Place the amarettini in a freezer bag and crush them with a rolling pin into crumbs. Distribute the crumbs over small glasses, then cover with about two-thirds of the rhubarb-strawberry compote. Spoon half of the cream on top. Add the remaining compote and finish with the rest of the cream. Chill for about an hour.
