Ingredients

  • 600 g fresh ripe raspberries
  • 6 tbsp powdered sugar
  • 3 tbsp Grappa
  • 2 Eggs
  • 500 g mascarpone
  • 300 ml whipping cream (at least 30% fat)
  • 4 ladyfingers

Instructions

    Gently wash the raspberries and mix with 2 tbsp powdered sugar and the Grappa in a bowl. Separate the eggs; beat the yolks with the remaining powdered sugar until fluffy. Gradually add the mascarpone to the yolks and stir into a smooth cream. Whip the egg whites very stiffly. Whip the cream also stiffly and gently fold both into the cream.
