Strawberry Pudding

Strawberry pudding with fresh strawberries from Spoonsparrow: cherry juice and vanilla cream give the summer dessert its i-tüpfelchen!

Ingredients

  • 500 g fresh strawberries
  • 2 tbsp lemon juice
  • 150 ml cherry juice
  • 2 tbsp Raw cane sugar
  • 0.5 tbsp cornstarch
  • 150 g whipping cream
  • 1 Tbsp vanilla sugar
  • fresh mint

Instructions

    Clean, wash, pat dry and roughly cube the strawberries. Place half in a pot and briefly blend with an immersion blender. Add lemon juice, cherry juice and sugar, then bring to a boil.

    Whisk cornstarch with 2 tbsp cold water until smooth, immediately add to the strawberry mixture in the pot, bring to a boil again and stir until the pudding thickens. Fold in remaining strawberries, remove from heat and chill for 3 hours.

    Before serving whip the cream with vanilla sugar until stiff peaks form. Arrange the strawberry pudding on plates and top with whipped cream.
