Cream Bavarian Style (Bavarian Cream) with Forest Berries

Ingredients
- 1 Vanilla bean
- 200 ml Milk (3.5% fat)
- 4 sheets gelatin
- 3 egg yolks
- 50 g whole cane sugar
- 200 ml whipping cream
- 500 g mixed berries (e.g., strawberries, raspberries, blueberries)
- 0.5 lemon
- 1 tbsp honey (15 g)
- 100 ml cloudy apple juice
- 2 sprigs Mint

Slice the vanilla bean lengthwise and simmer with milk in a pot. Remove from heat and let steep for about 15 minutes. Soak gelatin in cold water.

Beat egg yolks with sugar until fluffy in a bowl. Strain milk into the mixture and whisk over a double boiler until creamy. Squeeze out excess water from gelatin and stir in. Then whisk over a cold water bath until the cream slowly begins to set.

Whip cream stiffly and fold it into the custard. Pour into chilled molds and cover, refrigerating for at least 3 hours.

Meanwhile, strain, wash, trim berries and cut as needed. Juice lemon, bring juice with honey and apple juice to a boil. Remove from heat and mix in berries. Let cool.

Shake mint dry. Carefully unmold the cream onto plates and spread berry compote around it. Serve garnished with mint.
