Ingredients

  • 400 g fresh strawberries
  • 1 Vanilla bean
  • 1 Organic lemon
  • 3 eggs
  • Salt
  • 400 g Low-fat quark
  • 50 g cane sugar
  • 2 tsp cornstarch
  • butter (for the baking dish)

Instructions

    Wash and clean the strawberries, then cut them lengthwise into halves or quarters depending on size. Split the vanilla bean in half lengthwise and scrape out the seeds with a knife. Rinse the lemon under hot water, pat dry, and finely grate the zest.

    Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form. In a bowl, whisk together the yolks, quark, vanilla seeds, lemon zest, sugar, and cornstarch; fold in the beaten egg whites. Divide the mixture into four buttered, oven‑proof ramekins and arrange the strawberries on top.
