Strawberry Pizza (Sheet Cake with Cream and Strawberries)

- 0.5 cube Yeast
- 60 g sugar
- 350 g flour
- 1 pinch salt
- 60 g Butter
- 1 egg yolk
- 250 g quark
- 200 ml whipping cream
- 80 g sugar
- 200 g coconut flakes
- 400 g wild strawberries
- 2 packets vanilla sugar

Whisk the yeast with 1 tsp sugar and 100 ml lukewarm water until smooth. In a bowl combine flour and salt, pour in the dissolved yeast, add remaining sugar, butter, and 1 egg yolk; knead with an electric hand mixer’s dough hooks into a smooth dough. Cover and let rise in a warm place for about 45 minutes.

Roll the dough on a floured surface to the size of a baking tray (about 25x25 cm) and transfer it onto a parchment‑lined tray, shaping a rim. Lay another sheet of parchment over it, leaving a 2 cm border, sprinkle dried legumes on top, and blind bake in a preheated oven at 180 °C fan for about 25 minutes.

Mix the quark with vanilla sugar, sugar, and 100 g coconut flakes until smooth. Fold in the whipped cream.

Spread the cream mixture over the cooled cake base, arrange washed and cleaned berries on top, add remaining strawberries, and serve.
