Ingredients

  • 1.2 kg strawberries
  • 500 g sugar (2:1)
  • 1 tbsp dried green peppercorns
  • 4 tbsp balsamic vinegar

Instructions

    Wash, clean and finely puree the strawberries. Mix the strawberry purée with the sugar in a large pot.

    Crush the peppercorns in a mortar until fine. Add them to the strawberry-sugar mixture and stir continuously while bringing to a boil.

    Cook for about 4 minutes, stirring constantly. Stir in the vinegar, perform a gel test, then ladle the hot jam into clean jars, filling them almost to the brim. Let the jars cool upside down.
