Ingredients

  • 1.2 kg ripe plums
  • 1 kg gelatine sugar
  • 1 Vanilla bean

Instructions

    Peel the plums with a sharp knife, optionally peel them, then separate the flesh from the pits and skins, finely chop. Weigh the flesh; it should be about 1 kg. Place in a pot and mix with the gelatine sugar. Split the vanilla bean, scrape out the seeds and add to the fruit mixture. Let sit for 30 minutes, then bring to a boil and cook while stirring for another 3-4 minutes.

    Pour hot into prepared jars, screw on lids and invert. After a few minutes turn back over and let cool.
