Strawberry Jam with Pepper and Balsamic

Ingredients

  • 1 kg strawberries
  • 500 g gelatin sugar (2:1)
  • 100 ml balsamic vinegar
  • 2 tbsp brown sugar
  • 1 tbsp green peppercorns (jarred)

Instructions

    Wash, clean, cut the strawberries into pieces and combine with the sugar in a pot. Mix well and let steep for about 20 minutes.

    Meanwhile, simmer the balsamic with the sugar while stirring until syrupy and caramelized. Remove from heat.

    Bring the strawberry mixture to a boil while stirring. Cook for about 4 minutes, bubbling. Stir in the drained and finely chopped green peppercorns and the balsamic, perform a gel test, then fill prepared jars. Seal immediately and allow to cool.
