Strawberry Mousse

Ingredients
- 250 g strawberries
- 6 sheets gelatin
- 4 eggs
- 70 g sugar
- 200 g cold whipping cream
- 100 g watermelon
- 50 g wild strawberry
- Mint leaves (for garnish)

Wash, trim, and chop the strawberries. Blend into a puree in a blender. Soak the gelatin in cold water. Separate the eggs. Whisk the yolks with 40 g of sugar until pale and frothy for about 5 minutes. Warm 3-4 tablespoons of strawberry puree in a small saucepan and dissolve the drained gelatin in it. Stir the strawberry puree and dissolved gelatin into the yolk foam.

Whip the egg whites with the remaining 30 g of sugar until stiff peaks form and fold them in gently. Whip the cream to stiff peaks and fold it in carefully as well. Divide the mixture among glasses, cover, and chill for about 2 hours.

Just before serving cube the watermelon, wash and pat dry the wild strawberries. Distribute the watermelon cubes and wild strawberries over the mousse and garnish with mint leaves.
