Quick Strawberry Mousse
A quick strawberry mousse from Spoonsparrow: ripe strawberries and whipped cream combine into a delicious summer dessert!
Ingredients
- 4 sheets of white gelatin
- 500 g fresh strawberries
- 0.5 Organic lemon
- 75 g sugar
- 2 egg whites
- 150 g whipping cream
- 2 tbsp pistachios

Soak gelatin in cold water. Wash and peel strawberries, set aside 100 g for garnish; place the rest in a tall mixing bowl. Rinse the lemon hot, pat dry, grate zest finely, then squeeze juice. Add lemon zest, juice, and sugar to the strawberries and blend.

Dissolve gelatin according to package instructions. Stir 6 tablespoons of strawberry puree with the dissolved gelatin. Gradually fold this mixture into the remaining strawberry puree while stirring.

Beat egg whites and whipping cream separately until stiff peaks form. When the mixture starts to thicken, whisk vigorously again, then gently fold in the beaten egg whites and whipped cream. Spoon the quick strawberry mousse into four portion molds (about 150 ml each) and chill for 1–2 hours.

Before serving, chop pistachios. Wash and halve the reserved strawberries. Briefly place the portion molds in hot water, loosen the rim with a small knife, then carefully pour the mousse onto dessert plates. Sprinkle with pistachios and garnish with strawberries.
