Ingredients

  • 500 g strawberries
  • 1 Organic Lime
  • 5 sheets gelatin
  • 250 g whipping cream
  • butter (for the molds)
  • fresh mint

Instructions

  1. 1.

Wash strawberries, set aside 150 g, chop the rest, puree and strain through a sieve. Soak gelatin in cold water and dissolve it gently in a small pot over low heat. Add some strawberry purée, then mix everything together.

  2. 2.

Butter four ramekins lightly and fill them with a layer of strawberry purée, place in the refrigerator. Keep the remaining purée in a bowl chilled until it starts to gel. Whip cream stiffly and fold into the strawberry purée, pour into the molds and chill for 3 hours.

  3. 3.

Slice the remaining strawberries. Zest the lime, squeeze its juice. Arrange strawberry slices on plates, drizzle with 2 tsp lime juice and decorate with zest. Briefly dip the strawberry mousse in hot water and pour over the strawberries. Garnish with mint leaves.
