Strawberry Liqueur

Ingredients

  • 1 Vanilla bean
  • 1750 g fresh strawberries
  • 500 g raw cane sugar
  • 700 ml rum

Instructions

    Slice the vanilla bean lengthwise and scrape out the seeds with a knife. Clean, wash, dry the strawberries and pat them dry, then boil them in 1 liter of water together with the vanilla seeds and the bean. Simmer for about 10 minutes over low heat. Remove the vanilla bean, puree the mixture and strain the strawberry purée through a fine sieve.

    Cook the strawberry purée again with sugar for another ~10 minutes over medium heat. Remove from the stove, add rum and stir well. Pour the hot liqueur into clean, sealable bottles as hot as possible. Store the liqueur cool, dry and dark.
