Ingredients

  • 5 egg yolks
  • 125 g sugar
  • 2 tbsp vanilla sugar
  • 350 ml milk
  • 250 ml brandy (or rum)

Instructions

    Place the egg yolks with the sugar and vanilla sugar in a metal bowl and whisk. Add the milk and stir over a hot water bath until thick and creamy.

    Gradually stir in the brandy. Let the egg cream cool, then strain it through a fine sieve into a bottle or carafe. Seal well and refrigerate until ready to serve.
