Ingredients
- 4 ripe mangoes
- juice of 1 lemon
- 500 g gelatin sugar (2:1)
- 15 g fresh ginger
- 2 tbsp coconut flakes (optional)

Peel the mangoes, cut the flesh away from the pit and dice into small pieces. Mix with lemon juice and gelatin sugar, then mash into a puree.

Cover and let sit overnight. Peel and grate the ginger, add to the mango mixture. Cook over stirring for 4 minutes until sparkling. Stir in coconut flakes if desired.
