Ingredients

  • 1 kg fresh strawberries
  • 500 g ginger
  • 3 tbsp Lemon juice
  • 0.5 tsp vanilla powder
  • 1 cinnamon stick
  • 500 g birch sugar (gelatinous sugar 3:1)

Instructions

    First sterilize jars and lids by boiling them for about 10 minutes in a large pot of hot water. Then remove the jars from the water and turn them upside down on clean kitchen towels to cool.

    Clean, wash and cut strawberries into halves or quarters depending on size. Clean, wash and chop ginger into small pieces. Place strawberries, ginger, lemon juice, vanilla powder, cinnamon stick and birch sugar in a pot. Cook for 4 minutes while stirring until bubbling.

    Pour the hot strawberry-ginger jam as hot as possible into the prepared jars, seal immediately, invert them and let cool.

    It tastes great on fresh bread or with soft cheese. The jar can be kept sealed for about a year; after opening it should be used within a few days.
