Ingredients

  • 0.5 cube fresh yeast (21 g)
  • 250 ml lukewarm milk
  • 500 g flour
  • 20 g sugar
  • 2 Eggs
  • 1 pinch salt
  • 75 g melted butter
  • butterfat (for frying)
  • flour (for the work surface)
  • powdered sugar (for dusting)

Instructions

    Crush the yeast and dissolve it in the milk. Sift the flour into a bowl, make a well in the center, pour in the yeast mixture, add sugar, eggs, salt and about 50 g butter, and knead into a soft, smooth dough. Cut the dough into 12 strands, shape them into small balls, brush with liquid butter, cover and let rise for about 10 minutes.

    Then, using fingers dipped in butter, pull each ball apart, letting the dough edge glide through your hand so that a thin window forms in the middle. Slide the buns into hot fat (about 170 °C) and fry in batches. Pour hot fat over the buns 1–2 times, bake 1–2 minutes until golden brown on one side, carefully flip to keep the windows bright. Fry 1–2 minutes on the second side until golden brown. Drain well and dust with powdered sugar before serving.
