Ingredients

  • 2 stovetop chickens (about 600 g)
  • Salt
  • Pepper (freshly ground)
  • 8 sage leaves
  • 4 bay leaves
  • 4 Garlic cloves
  • 8 slices Parma ham
  • 800 g waxy potatoes
  • 6 tbsp Olive oil

    Preheat the oven to 200°C (400°F) with upper and lower heat. Wash the stovetop chickens, pat dry, halve them, and season with salt and pepper. Place a sage leaf on each outer side and a sage leaf, bay leaf, and peeled garlic clove on each inner side. Wrap the four halves in Parma ham and secure with kitchen twine. Wash, peel, and slice the potatoes into about 0.5 cm thick rounds. Season with salt and pepper and toss in 4 tbsp olive oil.

    Arrange the potatoes on a baking sheet lined with parchment paper and place the chickens on top, brushing them with the remaining olive oil. Cover with foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional ~15 minutes until crispy. Plate with the potatoes, remove the kitchen twine, and serve.
