Arugula Salad with Chicken and Nuts

A fresh arugula salad featuring grilled chicken breast and crunchy nuts, perfect for a healthy lunch from Spoonsparrow!

Ingredients

  • 4 chicken breasts (Suprême, chicken breast with wing bone)
  • Salt
  • pepper (ground)
  • 30 g Butter
  • 200 g arugula
  • 150 g mixed nuts
  • 5 tbsp balsamic vinegar
  • 50 ml olive oil

Instructions

    Wash the chicken and pat dry. Season with salt and pepper. Heat butter in a pan and sear the chicken breasts until golden brown. Reduce heat, cover, and cook for about 10 minutes until done.

    Meanwhile, rinse and spin the arugula dry. Arrange on plates and sprinkle with mixed nuts. Cut the cooked chicken into bite-sized pieces and distribute over the salad. Whisk together vinegar and olive oil and serve as a dressing.
