Chicken Thighs with Apple and Yogurt Sauce

Ingredients
- 4 chicken thighs (upper and lower legs)
- 2 tbsp honey
- 60 g Butter
- 1 tsp paprika powder (spicy)
- 2 tbsp lemon juice
- Salt
- black pepper (freshly ground)
- 2 Apples
- 2 Spring Onions
- 1 small stalk celery
- 1 handful thyme
- 200 g yogurt

Preheat the oven to 180°C with both fan and top heating.

Rinse the chicken and pat dry. In a small saucepan melt honey, butter, paprika powder, lemon juice, salt, and pepper. Brush the mixture all over the thighs and place them skin side up on a baking tray lined with parchment paper. Roast in the oven for about 25 minutes until golden brown, brushing with butter every few minutes.

Wash the apples, quarter them, remove the core, and cut the quarters into slices. During the last 10 minutes of roasting add the apple slices to the chicken and brush them with the seasoning mixture as well.

For the sauce wash and trim the spring onions, slicing them thinly. Wash and slice the celery finely. Shake off excess water from the thyme, set aside a few stems for garnish, and strip the leaves. Mix the thyme, celery, and spring onions into the yogurt and season with salt and pepper to taste.

Arrange the chicken thighs with apple slices on plates, pour the sauce over them, and garnish with thyme before serving.
