Stockfish with Dried Fruits

Ingredients
- 600 g stockfish
- 8 dried plums
- 2 tbsp raisins
- 500 g egg tomatoes
- 1 onion
- 2 Garlic cloves
- 20 g parsley
- 50 g Pine nuts
- 5 tbsp olive oil
- Salt
- Pepper (freshly ground)
- basil (for garnish)
Instructions

Soak the fish covered in the refrigerator for 2 days, changing the water several times.

On the day of preparation soak the plums with raisins in water.

Bring plenty of water to a boil and use it to steep the tomatoes and the fish separately, letting them infuse for a few minutes.

Drain the fish, remove the bones, and cut into bite-sized pieces. Peel the tomatoes, remove seeds and stems, and chop into pieces.

Peel and finely chop the onions and garlic. Wash the parsley, shake dry, pluck leaves from stems, and finely chop. Toast the pine nuts in a dry pan until golden brown. Heat the olive oil and sauté the onions with garlic until translucent; add the fish, drain the dried fruits, then add them. Stir in parsley and tomatoes, season lightly with salt and pepper. Add a splash of water and cook over low heat covered for 20-25 minutes.

Plate on dishes and serve garnished with pine nuts and basil leaves.
