Ingredients

  • 2 kg mussels
  • 1 onion
  • 2 Garlic cloves
  • 2 small spring onions
  • 2 carrots
  • 2 chili peppers
  • 400 g Tomatoes
  • 2 sprigs Rosemary
  • 3 tbsp olive oil
  • 200 ml white wine
  • Sea salt
  • pepper (ground)
  • fresh herbs (for garnish)

    Wash the mussels carefully under running water. Remove any beards and check each mussel to ensure it is closed; discard open ones. Peel and finely chop the onion and garlic. Clean, wash, and slice the spring onions into thin rings. Peel, wash, and dice the carrots. Wash the chili peppers. Blanch the tomatoes in boiling water, cool them, peel, quarter, remove stems and seeds, then dice.

    Heat the olive oil in a large pot. Sauté the onion, garlic, spring onion rings, chili, and carrots briefly. Add the tomatoes and wine, stir, and simmer for about 3 minutes. Then add the mussels and rosemary. Cover and let simmer for about 10 minutes until all mussels have opened. Season with salt and pepper, garnish with fresh herbs, and serve with toasted white bread if desired.
