Ingredients

  • 300 g potatoes
  • 300 g zucchini
  • 3 tomatoes
  • 1 large vegetable onion
  • 2 EL oil
  • Salt
  • Pepper (freshly ground)
  • 2 TL lemon juice
  • aluminum foil
  • oil

Instructions

    Peel, wash, and slice the potatoes thinly. Wash the zucchini, trim ends, halve lengthwise, and slice. Clean and halve the mushrooms.

    Wash the tomatoes and cut into wedges.

    Peel and finely chop the onion. Mix all vegetables with salt, pepper, oil, and lemon juice.

    Cut aluminum foil into two pieces about 30 x 20 cm each and brush the shiny side with oil. Distribute the vegetable mixture on the foil. Fold the foil over and seal the ends tightly. Grill or bake in a preheated oven at 200°C for about 25–30 minutes.
