Ingredients

  • 4 tuna fillets (about 150 g each)
  • 1 Lime (juice)
  • 1 tbsp coarse sea salt
  • 1 tsp mixed peppercorns
  • 2 tsp coriander seeds
  • 8 marinated grape leaves
  • 4 tbsp olive oil

Instructions

    Wash the tuna, pat dry and drizzle with lime juice. In a mortar combine the salt, pepper and coriander, crush roughly, then sprinkle over the fillets.

    Pat the grape leaves dry and place them in a perforated steamer basket. Gently press each tuna fillet into the leaves and steam at 100°C for about 10 minutes.
