Atlantic Cod with Cucumbers and Mustard Sauce

Ingredients
- 1 Shallot
- 1 cucumber (washed, halved lengthwise, seeded and sliced into ~0.5 cm thick pieces)
- 2 tbsp butter
- 1 tbsp Lemon Juice
- 125 ml Vegetable broth
- Salt
- Pepper (freshly ground)
- 600 g Atlantic cod fillet
- 1 tbsp butter
- 1 tbsp flour
- 250 g whipping cream
- 250 ml milk
- 2 tbsp grainy mustard
- 2 tbsp chopped dill sprigs

For the sauce, foam the butter in a small pot, whisk in flour and cook until lightly browned. Add cream and milk, stir to combine, bring to a boil, then add mustard and simmer for about 15 minutes; season with salt and pepper.

Peel and finely chop the shallot.

Thinly peel the cucumber, halve lengthwise, seed it and cut into thin slices.

Sauté the shallot and cucumber pieces in butter until translucent, pour in lemon juice and vegetable broth, season with salt and pepper, bring to a boil and simmer covered for about 8 minutes.

Cut the cod fillet into portions and place over the cucumber mixture; season with salt and pepper and let cook covered for about 8 minutes.

Carefully lift the fish from the vegetable bed, stir in the mustard sauce, taste and adjust seasoning, then plate the fish on a dish; serve with boiled potatoes.
