Ingredients
- 4 trout (ready to cook)
- 1 Garlic clove
- 1 tsp coriander seeds
- Salt
- Pepper (freshly ground)
- 2 tbsp dry sherry
- 1 small savoy cabbage
- 1 piece ginger (walnut-sized, peeled and sliced into fine strips)
- 125 ml Vegetable broth
- 2 tbsp sesame oil
- 2 tbsp roasted peanuts (fat-free)
- 1 tbsp red peppercorns

Wash the trout, pat dry, and make several shallow cuts on each side with a knife.

Grind coriander with salt and garlic in a mortar, stir in sherry.

Rub the trout with this mixture and let marinate cold for a short time.

Clean the cabbage, cut off the core, roughly chop and place in a roasting pan; lay the fish on top, sprinkle with ginger strips and red peppercorns, cover and bring to a boil over the stove. Turn off the heat and simmer covered for about 15 minutes.

Arrange the trout on the savoy leaves and serve sprinkled with peanuts.
