Grilled Trout

Ingredients
- 4 trout (pre-cooked portion size)
- 1 large untreated lemon
- 2 Garlic cloves
- 20 g mayonnaise (light)
- 8 sprigs thyme
- 8 stems oregano
- 4 sprigs Rosemary
- vegetable oil (for grill rack)

Clean and pat the trout dry. Peel and finely chop the garlic. Slice the lemon into about 0.5 cm thick rounds. Spread the mayonnaise all over the fish. Stuff the cavity with garlic, lemon slices, and herbs. Cover with plastic wrap and refrigerate for about 4 hours.

Preheat the grill; when it is almost hot, place smoking chips in a foil pouch or folded aluminum foil and poke holes around it. Place on the grill rack and close the lid until smoke forms.

Place each trout on a grill rack brushed with oil, put it on the hot grill, and cook with the lid closed for 6–8 minutes. Flip and grill the other side for another 6–8 minutes until golden brown.
