Trout with Herb Mushrooms

Ingredients

  • 1120 g fresh (stream) trout (4 fresh stream trout)
  • 2 EL lemon juice
  • Salt
  • Pepper (freshly ground)
  • 1 bundle mixed herbs (chives, parsley, dill…)
  • 2 Garlic cloves
  • 125 g mushrooms
  • 2 Spring Onions
  • 40 g soft butter
  • 2 TL oil

Instructions

    Wash and pat the trout dry. Drizzle with lemon juice and season inside and out with salt and pepper.

    Wash the herbs, shake off excess water and finely chop. Peel the garlic.

    Clean the mushrooms and slice thinly. Wash, trim, and cut spring onions into rings. Combine onion rings and mushroom slices in a bowl and squeeze the garlic over them.

    Add soft butter and herbs to the mushrooms and mix well. Season with salt and pepper. Fill the prepared trout with this mixture and secure with toothpicks.

    Brush the stuffed trout lightly with oil and grill or pan‑fry each side for about 4 minutes.
