Steamed Thai-Style Shrimp Balls

Ingredients
- 2 spring onions (white part only)
- 2 cloves garlic (finely chopped)
- 1 tsp ginger (grated)
- 600 g peeled shrimp (deveined)
- 1 Egg white
- 1 tbsp Cornstarch
- Salt
- Cayenne pepper
- 1 pak choi
- soy sauce

Wash and clean spring onions, halve lengthwise and finely chop.

Wash shrimp, pat dry and finely blend half. Finely chop the other half. Combine with spring onions, ginger, garlic, and egg white. If mixture is too soft, add a little cornstarch. Season with salt, some soy sauce, and cayenne pepper, then shape about 20 balls with damp hands.

Wash and clean pak choi, loosely place in bamboo steamer basket. Drizzle with soy sauce. Place the balls on top and steam covered over boiling water for about 10 minutes.

Serve with chili or soy dip as desired.
