Spicy Clafoutis with Shrimp

Ingredients
- 20 Cherry tomatoes
- 250 g North Sea shrimp
- Salt
- Pepper (freshly ground)
- 150 ml milk
- 250 ml Whipping Cream
- 2 Eggs
- 2 egg yolks
- 10 g starch
- 1 handful basil
- butter (for the pans)
Instructions

Preheat the oven to 200°C with top and bottom heat. Wash the tomatoes, rinse the shrimp and let them drain.

In a bowl whisk together milk, cream, eggs and yolks. Season with salt and pepper and stir in the starch. Rinse basil, shake dry, finely chop and fold into the egg mixture.

Butter four small ramekins and distribute the shrimp inside. Pour the egg mixture over and add about five tomatoes to each. Bake for approximately 30 minutes until golden brown and serve immediately.
