Ingredients

  • 1 kg large shrimp
  • 250 g cherry tomatoes (yellow and red)
  • 4 fresh garlic cloves
  • 4 tbsp olive oil
  • 1 lemon (juice)
  • Sea salt
  • black pepper (freshly ground)
  • a handful parsley
  • 200 g sheep cheese
  • 100 g black olives (pitted as desired)

Instructions

    Preheat the oven to 240°C with fan and top heating.

    Rinse the shrimp and pat dry. Wash and clean the tomatoes. Peel the garlic and press into a large bowl. Add oil, lemon juice, salt, and pepper; mix well. Combine shrimp and tomatoes, spread on a baking tray, and bake for 10-15 minutes.

    Meanwhile rinse parsley, shake dry, pick off leaves, and roughly chop. Crumble the sheep cheese.

    Remove the shrimp and tomatoes from the oven, add the cheese, olives, and parsley, mix gently, and arrange on a plate to serve.

    Serve with white bread as desired.
