Steamed Spinach with Egg

Spoonsparrow steamed spinach with egg tastes delicious again!

Ingredients

  • 800 g fresh spinach
  • 2 shallots
  • 1 Garlic clove
  • 1 tbsp Olive Oil
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • 40 g parmesan cheese (1 block)
  • 100 ml soy cream
  • 4 eggs

Instructions

    Wash the spinach, discard stems and dry thoroughly.

    Peel and finely chop the shallots and garlic. Heat the oil in a pan. Sauté the shallots and garlic over medium heat until translucent.

    Add the spinach and cover; steam on low heat until wilted. Season with salt, pepper, and freshly grated nutmeg.

    Grate the parmesan cheese. Mix the soy cream with the spinach and half of the cheese. Divide into four small baking dishes and press a shallow indentation into each.

  5. 5.

    Place an egg in each cavity, sprinkle with remaining parmesan, and bake in a preheated oven at 200 °C (180 °C fan) for 10–15 minutes until set. Season with salt and pepper before serving.
