Lamb Patties with Vegetable Filling and Potato Gratin

Ingredients

  • 1 old-fashioned roll
  • 1 onion
  • 1 Garlic clove
  • oil (for frying)
  • 2 Eggs
  • 1 tbsp fresh chopped basil
  • 600 g lamb mince
  • breadcrumbs
  • Salt
  • pepper (ground)
  • 0.5 red bell pepper
  • 0.5 green zucchini
  • 0.5 yellow zucchini
  • 20 g black olives (pitted)
  • Salt

Instructions

    Soak the roll in lukewarm water. Peel and finely chop the onion and garlic, then sauté in 1 tbsp oil until translucent. Remove from heat and let cool slightly. Mix with eggs, basil, and the squeezed-out bread into the mince, adding breadcrumbs if needed until the mixture is firm but not too soft. Season with salt and pepper.

    Wash, trim, and finely dice the bell pepper and zucchini for filling. Chop the olives and combine with the vegetables, seasoning with salt and pepper.

    Shape the meat mixture into balls, create a cavity in each, and fill with 1–2 tbsp of the vegetable mix. Reform the dough around the filling to form complete balls. Fry in hot oil for 5–6 minutes until golden brown on all sides.

    Serve with potato gratin as desired.
