Steamed Salmon with Garlic Oil

Ingredients
- 4 salmon fillets (with skin, 200 g each)
- Salt
- black pepper (freshly ground)
- 1 lime (juiced)
- 2 Spring Onions
- 8 garlic cloves
- 4 tbsp light sesame oil

Wash and pat the salmon fillets dry. Sprinkle with salt and pepper and drizzle with lime juice. Trim the spring onions, wash them and cut into thin strips about 5 cm long.

Peel the garlic cloves, finely dice them and slowly roast in hot oil while stirring; once the garlic turns golden, remove from heat and fold in the spring onions.

Place the salmon in a steamer basket. Bring water to a boil in an appropriate pot, set the steamer basket inside, cover the pot and steam for about 7 minutes until cooked through.

Serve by arranging the salmon on plates and spooning the garlic oil with spring onions over it.
