Ingredients

  • 250 g wheat starch
  • 200 g shrimp (pre‑shucked and deveined)
  • 1 Spring onion
  • 1 tsp freshly grated ginger
  • 1 tsp Sesame oil
  • Salt
  • a pinch of sugar
  • soy sauce
  • 1 tsp sesame seeds
  • cilantro leaves for garnish

Instructions

    Mix wheat starch with about 100 ml boiling water, adding small amounts while kneading to form a smooth, elastic dough. Roll it thin and cut out circles roughly 8–10 cm in diameter.

    Rinse the shrimp, pat dry, and finely chop. Wash and trim the spring onion, slicing into thin rings. Combine shrimp, ginger, sesame oil, salt, and sugar; mix well. Place a tablespoon of filling onto each dough circle’s center. Fold each circle over, tucking the seam side in folds to create a zig‑zag edge. Steam the dumplings in a bamboo basket for about 8 minutes.
