Steak with Shrimp

Ingredients
- 4 beef fillet steaks (about 160 g each)
- Salt
- Pepper (freshly ground)
- 4 tbsp plant oil
- 4 shallots
- 40 ml cognac
- 120 ml red wine
- 1 tbsp butter
- 8 large shrimp (pre‑peeled and deveined)
- chili flakes
- 250 g Sugar snap peas

Preheat the oven to 100 °C with fan and top heat.

Rinse the steaks, pat dry, and season with salt and pepper. In a hot pan with 2 tbsp oil, sear each side for about 2 minutes until browned. Place on a rack in the oven (fat drips into a pan below) and bake for about 15 minutes to reach desired doneness.

Meanwhile peel and slice the shallots into rings. Sauté briefly in the steak pan using the fond. Deglaze with cognac and red wine, then simmer for about 5 minutes. Remove from heat, stir in butter, and season with salt and pepper.

Rinse the shrimp, pat dry, make a butterfly cut, and cook in another pan with remaining oil for 2–3 minutes. Season with salt, pepper, and chili flakes.

Blanch the sugar snap peas in salted water for about 2 minutes, then drain well. Plate the steaks and shrimp on bowls or plates, top with shallot sauce, and serve immediately.
