Ingredients

  • vegetable oil (for greasing)
  • 6 small onions
  • 4 tbsp olive oil
  • 30 g breadcrumbs
  • 1 tbsp Crème fraîche
  • 0.5 tsp chopped rosemary
  • 0.5 tsp chopped thyme
  • Salt
  • Pepper
  • 4 slices beef steak (e.g., top sirloin, about 250 g each)
  • 2 tbsp Vegetable oil

Instructions

  1. 1.

Preheat the oven to 160°C (320°F) with upper and lower heat. Lightly grease a baking sheet with oil.

  2. 2.

Peel two onions and finely dice them. Sauté in olive oil until translucent, then remove from heat. Mix in breadcrumbs and crème fraîche. Stir in rosemary and thyme, season with salt and pepper. Cut the remaining onions in half, skin side up, and place on the baking sheet. Bake for about 15 minutes, remove, and add roughly 1 tsp of filling to each half. Bake an additional 20 minutes.

  3. 3.

Meanwhile, rinse the steak, pat dry, season with salt and pepper, and sear both sides in a hot pan with oil until browned. Wrap in foil, place on top of the onions on the baking sheet, and cook for 4–6 minutes depending on thickness and desired doneness.

  4. 4.

Unwrap the steaks, slice, and serve each with two onion halves.
