Ingredients
- 500 g sliced pork tenderloin
- 300 g snow peas
- Salt
- 2 red bell pepper halves
- 300 g blanched bamboo shoots (glass or canned)
- 1 red chili pepper
- 2 Garlic cloves
- 1 tsp freshly grated ginger
- 2 tbsp sesame oil
- 1 tsp Honey
- light soy sauce
- a splash lime juice

Wash and pat the pork dry. Wash, trim and blanch the snow peas in salted water for a short time. Shock in ice water and drain. Wash, halve and slice the bell peppers into thin strips. Drain the bamboo shoots well.

Wash, halve, deseed and finely chop the chili pepper. Peel and finely chop the garlic. Add both with ginger to hot oil in a wok. Sear the pork for about 1 minute. Stir in snow peas and bell pepper and cook for 1‑2 minutes. Add honey, bamboo shoots and a splash of soy sauce; let simmer for another 1‑2 minutes. Season with soy sauce, lime juice and salt before serving.
