Ingredients

  • 2 Rib-Eye steaks (about 220 g each)
  • 50 g brown lentils
  • 1 clove garlic (finely chopped)
  • 1 onion (finely diced)
  • 1 tbsp bacon cubes
  • 1 tbsp parsley (finely chopped)
  • 20 ml cognac
  • 1 tsp brown sugar
  • 1 tbsp White Wine Vinegar
  • 150 ml meat broth
  • 2 medium potatoes (starchy, boiled)
  • 2 tbsp flour
  • 2 tbsp oil
  • oil for frying
  • Salt
  • ground pepper

Instructions

    Wash steaks, pat dry, season with salt and pepper, then sear in 2 tbsp hot oil on both sides. Remove and bake in preheated oven at 140°C (top and bottom heat) for about 10-15 minutes, or longer/shorter to taste.

    In the pan drippings sauté onions, garlic, and bacon. Add sugar, let caramelize, then deglaze with cognac and broth. Add lentils and simmer for about 15 minutes. Season with salt, vinegar, and pepper. Finally add parsley.

    Peel potatoes and use a mandoline to slice into fine strands. Pat dry, coat in flour, and fry in hot oil (180°C) for about 2 minutes until golden brown. Drain on paper towels.

    Arrange meat on the sauce and top with fried potato straws. Serve immediately.
